Dave McCormack aka Wilson’s BBQ, recognised as the UK leading Texas Style Pitmaster, will be diving deep into the authentic Texas Holy Trinity of barbecue: Brisket, Ribs and Sausage as well as Turkey, other proteins, numerous sides and of course pickles & sauces. Throughout the day Dave will be will be sharing all of the tips, techniques, and his extensive Texas BBQ knowledge. Whether you’re just starting out or looking to refine your skills – these classes are great for anyone who’s interested in the craft of Texas BBQ. About Dave:
Dave McCormack started cooking barbecue in 2014 and has taken inspiration from the craft barbecue scene in Texas. Wilson’s BBQ has featured in the Daily Mail, Texas Monthly Online, an ambassador for Tom Hixson of Smithfield as well as Development Consultant for Smokey Oak Barbecue. Following a visit to Texas in 2018 he was galvanised further to produce his own craft barbecue. He has adopted this approach and has multiple offset smokers to produce this style of barbecue.
