This brine is the fiery cousin of Sweetwater Spicer Company’s Apple Chipotle BBQ Bath, loaded with smoked habanero peppers, ancho chilies, onion, garlic, and balanced with the sweetness of apple juice. This is their best brine recipe… if you can handle it. Amazing, lip numbing, baked habanero brined hot wings are perfect. I’ve been told that a smoked pork tenderloin in this brine is so good one could mix a drink with it – that’s a high compliment for a piece of meat in my opinion. Sweetwater Spicer Company took 3rd Place in the Fiery Foods Festival wiht their baked wings vs. 42 fried wing competitors. Ever eaten something fried that wasn’t delicious? We were better than 41 of those. This brine is great on pork, poultry, and seafood.
